How can I see if a questionnaire has been filled out (or at least the email was opened, or the link clicked in the email) in the LP closing pipelines please?

With regards to seeing if an email has been opened: we do not currently track opens. However you can track clicks on links from the prospect you sent the mail to, by clicking on their profile name and then on the "Activity" tab on the slideover. Lastly, you can know that someone has clicked on the link and filled out the questionnaire (but not yet signed the LPA) when the LPA has moved to the "Sign LPA" stage in the LP closing pipeline.
