You can add custom data points to a prospect, person, organization, etc., by clicking on the name (which opens the slideover) and then clicking on "Add a new data point". We don't yet have the ability to add these custom data points to the pipeline to use for filtering. Perhaps a better solution for your need is to use tags for this purpose, as you can filter a pipeline by specific tags.
