Email BCC to Hub -- would be great to have a feature where each Hub user has a specific email address they can copy in their BCC field (of their regular mail client) to attach that email as an Activity to the recipient in Hub.

Hi Vincent, I can see how that would be useful. In the meantime, if you happen to use gmail, Hub has the ability to sync all conversations (even those started outside of Hub) that happen on gmail with the prospect's email address.
To get this, go to "Integrations" in the top right user menu and make sure gmail is integrated with all requested permissions, and make sure "Sync All Email Activity" is set for the person on the person's slideover (true by default).

I know -- unfortunately we're an M365 shop... Another option might be to allow for activities to be added, so I can manually copy an email into an activity.

, yes Hub does have a setting for this! Under Settings -> Firm Settings there will be a choice for Default sync email activity, which should help here.
